In fact, you can also make chia eggs using this technique if you have chia seeds on hand.<\/p>\n\n\n\n<p>If you&rsquo;re vegan or have an egg allergy in your family, you may be well familiar with flax eggs already. I didn&rsquo;t invent them, and I don&rsquo;t know who did, but I&rsquo;ve learned a lot about them over the years.<\/p>\n\n\n\n<p>I&rsquo;ve been guilty of referencing flax eggs as a substitution option without providing more detail. Now, I can link to this page so you&rsquo;ll know what the heck I&rsquo;m talking about. They also contain some fat, like real yolks do. As a bonus, they also offer some healthy fiber, which you won&rsquo;t find in real eggs. Substitute one flax egg for each chicken egg. <\/p>\n\n\n\n<p>The mixture will need 10 to 15 minutes to rest. Mix it up before you begin the rest of your baking prep. That way, it&rsquo;ll be ready to go when you need it.<\/p>\n\n\n\n<p>Note that flaxseeds come in two colors, golden or brown. They work interchangeably, although the darker color may impart a more pronounced flax flavor.<\/p>\n\n\n\n<h3 class=\"wp-block-heading return\" id=\"h-flax-eggs-work-well-in-many-baking-recipes\">Flax eggs work well in many baking recipes&hellip;<\/h3>\n\n\n\n<p>Flax eggs are well-suited for quick breads, such as banana bread and muffins, as well as simple cookie recipes. You can generally use flax eggs when the recipe meets the following qualifications:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>The recipe calls for a wheat-based flour, such as all-purpose or whole wheat. <a href=\"https:\/\/cookieandkate.com\/how-to-make-oat-flour\/\">Oat flour<\/a> seems to work well, too.<\/li>\n\n\n\n<li>The recipe is stirred together by hand (no mixer required).<\/li>\n<\/ol>\n\n\n\n<p>When possible, I try to offer egg substitution suggestions in the recipe notes. Here&rsquo;s a small selection of recipes that work well with flax eggs:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><a href=\"https:\/\/cookieandkate.com\/healthy-banana-bread-recipe\/\">Banana Bread<\/a> and <a href=\"https:\/\/cookieandkate.com\/favorite-banana-cake-recipe\/\">Banana Cake with Cream Cheese Frosting<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/cookieandkate.com\/healthy-blueberry-muffins\/\">Blueberry Muffins<\/a> (<a href=\"https:\/\/cookieandkate.com\/tag\/muffins\/\">view more suitable muffins here<\/a>)<\/li>\n\n\n\n<li><a href=\"https:\/\/cookieandkate.com\/citrus-olive-oil-cake-recipe\/\">Citrus Olive Oil Cake<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/cookieandkate.com\/monster-cookies-recipe\/\">Monster Cookies<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/cookieandkate.com\/peanut-butter-oatmeal-cookies-recipe\/\">Peanut Butter Oat Cookies<\/a><\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading return\" id=\"h-but-not-all-recipes\">&hellip;but not all recipes.<\/h3>\n\n\n\n<p>You can&rsquo;t whip flax eggs to infuse them with air, so they don&rsquo;t offer much lift to your baked goods. In other words, if your recipe calls for whipping whites together until fluffy (like a souffl&eacute; or an angel food cake), flax eggs will not be a suitable replacement. <a href=\"https:\/\/www.americastestkitchen.com\/guides\/vegan\/what-is-aquafaba\" target=\"_blank\" rel=\"noopener noreferrer\">Aquafaba<\/a> would be a better option in these situations.<\/p>\n\n\n\n<h3 class=\"wp-block-heading return\" id=\"h-gluten-free-baked-goods-require-special-consideration\">Gluten-free baked goods require special consideration.<\/h3>\n\n\n\n<p>Why? Gluten is a protein that provides structure. Real eggs also provide structure. In the absence of gluten, flax eggs often struggle to make up the difference.<\/p>\n\n\n\n<p>Fortunately, flax eggs tend to work pretty well with <a href=\"https:\/\/cookieandkate.com\/how-to-make-oat-flour\/\">oat flour<\/a> and gluten-free all-purpose flour blends, such as Bob&rsquo;s Red Mill.<\/p>\n\n\n\n<p>Flax eggs do <em>not<\/em> work well with almond flour or other nut-based flours. When I was recipe testing for <a href=\"https:\/\/amzn.to\/2ZiRArk\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">my cookbook<\/a>, I tried to substitute flax eggs in my lemony almond blueberry cake recipe (page 197). I ended up with what could only be described as&hellip; pudding, and not in a good way.<\/p>\n\n\n\n<h3 class=\"wp-block-heading return\" id=\"h-sometimes-you-can-skip-the-eggs-altogether\">Sometimes, you can skip the eggs altogether.<\/h3>\n\n\n\n<p>Surprisingly, I&rsquo;ve found that you can often omit eggs in pancake and waffle recipes.&nbsp;<a href=\"https:\/\/cookieandkate.com\/simple-vegan-pancake-recipe\/\">My vegan pancakes<\/a> turn out well without them, and I&rsquo;ve successfully made <a href=\"https:\/\/cookieandkate.com\/easy-gluten-free-oat-waffles\/\">these oat flour-based waffles<\/a> without the eggs (they were just a bit more delicate).<\/p>\n\n\n\n<p>When in doubt, adding a flax egg is a safer bet than omitting the egg. The only downside to this kind of fat is that it deteriorates (turns rancid) fairly quickly. Ground flaxseed spoils even faster than whole flaxseed, since it has been cracked open and exposed to air.<\/p>\n\n\n\n<p>To prolong the life of your flaxseed (ground or whole), store it in the refrigerator in an air-tight container. When properly stored, whole flaxseed will last about one year, whereas ground flaxseed will last about six months.<\/p>\n\n\n\n<p>Always give your flaxseed a whiff before using. If it smells like &ldquo;<a href=\"https:\/\/www.weekand.com\/healthy-living\/article\/flaxseed-expire-18009865.php\" target=\"_blank\" rel=\"noreferrer noopener\">oil paint or a box of crayons<\/a>,&rdquo; it has gone bad and should be discarded.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-grind-your-own-flaxseed\">How to Grind Your Own Flaxseed<\/h2>\n\n\n\n<p>Since whole flaxseeds store better, I like to grind my own flaxseed meal. It&rsquo;s easy. Blend whole flaxseeds in a food processor for about 60 seconds, or until they feel like a somewhat gritty flour when you rub them between your fingers. I&rsquo;ve also managed to do this in my Vitamix in sufficient quantity.<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter\"><img decoding=\"async\" width=\"1100\" height=\"1653\"
