I love this sweet potato hash in the morning with eggs, whether they&rsquo;re scrambled or <a href=\"https:\/\/cookieandkate.com\/favorite-fried-eggs-recipe\/\">fried<\/a>. It&rsquo;s not just for breakfast, though&mdash;this hash makes a hearty side dish for simple fare from fall through winter. Here are some notes before you get started. <\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>You don&rsquo;t have to peel the sweet potatoes,<\/strong> but you can if you prefer less texture.<\/li>\n\n\n\n<li><strong>You&rsquo;ll need a <a href=\"https:\/\/amzn.to\/4gG6zTe\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">half-sheet baking sheet<\/a> to fit all the veggies<\/strong> (about 12 by 18 inches). If your veggies are layered on each other, they will steam rather than caramelize, so split them between two pans if necessary. <\/li>\n\n\n\n<li><strong>Line your baking sheet with parchment paper<\/strong> so the caramelized edges don&rsquo;t stick to the pan. <\/li>\n\n\n\n<li><strong>This recipe requires an hour in the oven,<\/strong> given the amount of vegetables. Once you get this recipe into the oven, you can focus on a stovetop recipe to round out your meal. <\/li>\n\n\n\n<li><strong>You&rsquo;ll have plenty of leftovers, <\/strong>which you can keep in the refrigerator for up to five days or freeze for later.
